Show season ends, the trailers leave, and the assumption is that Wellington goes quiet until October. This year the opposite happened. Between April and late July, five restaurants opened or filed to open inside the village, most of them clustered at Lotis Wellington and the Pointe at Wellington Green. If you have been away or just heads-down at home, here is what changed on your side of the bridle path.
The thesis, in one line
The off-season is when Wellington's dining map is being redrawn. The show-season crowd is not here to see it, which means the tables you cannot get in February are open now.

Six named concepts, three postal codes, one off-season.
Lewis Prime Grill is the anchor
The story behind the newest tenant at the Pointe at Wellington Green matters more than the menu. Lewis Prime Grill opened at the Pointe at Wellington Green on May 14, and it is the latest from the Lewis family, the multigenerational group behind Okeechobee Steakhouse in West Palm Beach and Lewis Steakhouse in Jupiter. The restaurant took over the former Stonewood Grill & Tavern space at 10120 Forest Hill Blvd, gutted and rebuilt to Ralph Lewis's vision of a modern American grill.
Two details from that build-out are worth knowing before you book.
First, this is not a satellite of the West Palm mothership. The Wellington menu flares from straight steakhouse fare and also veers from the Lewis Prime Grill that opened in Loxahatchee in 2022, which reads more like a stepsister to Okeechobee Steakhouse. In Wellington, diners can find pastas, ribs, and several dishes with a focus on shareable plates, because "it's how people eat today," according to Lewis, with guests ordering small plates so they can taste several dishes at one meal. Small plates include chicken and churros as a twist on chicken and waffles, plus Asian sticky ribs, crab-stuffed mushrooms, and pork belly bao buns, all created by corporate chef Ryan Mussell, brought in from Massachusetts.
Second, the family is not treating Wellington as a one-off. Ralph Lewis, third generation of the Okeechobee family, calls this the first of a ten-unit chain he is taking statewide, saying the county's growth has spread west and "there's nothing like this out here." Read that as a signal about where the restaurant group thinks the Wellington side of Forest Hill is going.
Kura, Rosie's, and the Lotis / Wellington Trace shift
Two other openings tell a different story: national chains and family operators are treating Wellington as a first-string market rather than a suburb of West Palm.
Kura is the clearest case. Kura Sushi celebrated its grand opening at Lotis Wellington, 1349 S. State Road 7, Bay 101, on Friday, April 10 after a soft opening on March 25, marking the brand's first location in the greater West Palm Beach metropolitan area and its fifth in Florida. Hours are Sundays 11 a.m. to 9 p.m., Mondays through Thursdays 11:30 a.m. to 9 p.m., Fridays 11:30 a.m. to 9:30 p.m., and Saturdays 11 a.m. to 9:30 p.m. The company chose Wellington ahead of West Palm, Boca, or Palm Beach Gardens. That is not typical.
Rosie's is the family version of the same argument. Owner Anthony Vultaggio opened Rosie's Pizza and Restaurant at the Courtyard Shops, 13860 Wellington Trace, as a neighborhood, full-service pizzeria with about 50 seats, indoor and outdoor seating, and a menu centered on New York-style pies alongside Sicilian and Detroit-style squares, plus chicken parm, chicken francese, and chicken saltimbocca. An award-winning chef who has earned Best Pizza in Palm Beach County runs the kitchen, and the pies use a signature 72-hour dough fermentation.
If you have been ordering delivery from Royal Palm or driving to Boca for a Sicilian slice, that math is now different.
The upscale Mexican that is not a chain
Tres Gallitos is easy to miss because it does not have a splashy corporate parent. Located in the heart of Wellington, Tres Gallitos brings a modern, upscale interpretation of Mexican cuisine to the local dining scene, with a refined yet approachable menu that balances traditional flavors with contemporary presentation, and a focus on bold, authentic flavor profiles. Worth a Tuesday.
What is filed but not yet open
Two names to watch before season starts.
Garden Butcher. Garden Butcher LLC filed permit applications with the Florida Department of Business and Professional Regulation to open at The Lotus development at 1385 South State Road 7, its third South Florida location after Boca Raton and West Palm Beach, and the Wellington location is listed as "coming soon" on the company's website. Founded by chef Erin Leeds, Garden Butcher serves made-to-order breakfasts, salads, wraps, sandwiches, grain bowls, and smoothies alongside a market stocked with grab-and-go meals, with every dish made without seed oils or refined sugar and prepared using local, seasonal, and organic ingredients whenever possible. This one is directly aimed at riders and trainers who read every label.
Cluck Face Nashville Hot Chicken. The husband and wife team of David and Nancy Chapman expected to open the restaurant in June 2026. If you have been driving to Nashville-hot pop-ups in West Palm, that is another commute that shortens.
The Thursday habit worth keeping
While the restaurants get the headlines, the Wellington Amphitheater at 12100 Forest Hill Boulevard is still doing the quiet work of anchoring summer nights. The rhythm is two series running in parallel.
- Thursday Nights in Wellington, the food-truck-and-music series. Recent lineups include Jukebox Gypsies playing classic rock on July 9 and Mixtape running '70s, '80s, '90s and 2000s covers on July 16.
- Summer Concert Series on select weekends. The 2026 slate has included True Rumours as a Fleetwood Mac tribute, Grey Street as Dave Matthews Band, The Dirtt as a Mötley Crüe experience, and Touch & Go as a Cars tribute, with a Fall Concert Series adding Foo Fight and Still Alive as Foo Fighters and Pearl Jam tributes.
Food trucks at the Thursday series are booked through Gourmet Truck Expo, and the village posts the current schedule and any weather cancellations on its calendar. Pair it with a Rosie's slice on the way in and the evening plans itself.
Why this cluster matters if you already live here
Three of the six concepts are inside a five-minute drive of each other along South State Road 7, at Lotis Wellington and The Lotus. Lewis Prime Grill sits west on Forest Hill at the Pointe. Rosie's is south at the Courtyard Shops. You now have a full week of new tables without leaving 33414, which was not true in January.
The off-season timing is not an accident. Operators like Kura and the Lewis group open in April and May precisely so their staff can find its footing before the show crowd returns in October and January. If you want to try any of these while service is still calm and reservations are still possible, this is the window. By the time Wellington International's calendar fills back up, tables at Lewis Prime and Kura will be a harder ask.

A short summer routing that uses only 2026 openings and one longstanding institution:
- Early evening at the Wellington Amphitheater for a Thursday food truck round.
- Dinner at Lewis Prime Grill if the guest wants steak, Kura if they want a story, or Rosie's if they want a Detroit square.
- Breakfast the next morning at Garden Butcher once the Lotus location opens.
That is a Wellington itinerary made entirely of things that did not exist twelve months ago.
